RABBIT STAFADO

1 tsp pepper

1 tsp allspice

2 tsp rosemary

1 rabbit

1 tbs olive oil

3 onions sliced

2 tsp sugar

1 garlic clove

75ml vinegar

100ml red wine

50g tomato puree

Salt

Mix pepper allspice and rosemary and rub into rabbit

Brown rabbit and remove from pan

Add onions to pan with sugar and caremelise 15 mins

Add garlic 1 min

Add vinegar and wine and reduce by half

Add puree and salt

Add meat

Put in oven covered for 2 hours
