Chicken Tagine with Dates and Honey

2 chicken fillets

1 tablespoon olive oil

1 large onion

2 cloves garlic

1 tsp cumin

1 tsp ground coriander

1 tsp ground ginger

1 tsp turmeric

1 tsp cinnamon

1 tsp chilli powder

1 tsp ground nutmeg

1 cup stock

1 cup water

50g dates

50ml honey

Chopped coriander for garnish

Cut chicken into pieces and brown in the oil: remove from pan

Fry onion garlic and spics until onion is soft

Return chicken to pan with stock and water

COVER and Simmer for 1 hour

Remove lid and simmer for 20mins

Add dates and honey

Serve with coriander

SERVE IN A TAGINE WITH COUSCOUS
